    The Shun Premier collection is distinguished by hand-hammered blades and walnut-colored PakkaWood handles that evoke the artistry of traditional hand-forged knives. Handcrafted in Japan, the blades are thin and lightweight. The perfect sandwich slicer, this knife has a scalloped edge that cuts effortlessly through crusty breads, meats, cheeses and vegetables, while the wide blade is useful for spreading condiments.

    • Blade features a core of extremely hard VG-MAX "super steel" clad on each side with 34 microthin layers of stainless steel.
    • The striking hand-hammered finish (tsuchime in Japanese) reduces drag when cutting and helps to quickly release food from the blade.
    • Sharp scalloped blade cuts cleanly and efficiently through a multitude of foods.
    • Wide rounded tip is handy for spreading condiments.
    • Walnut-finish PakkaWood handle has a two-position design, providing a trigger grip for pull cuts and the perfect balance point for a pinch grip.
    • Stainless-steel end cap embossed with the Shun logo adds stability, strength and wide weight distribution from end to end.

    Use & Care

    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces such as stone, metal and glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone or frozen food, as other blades can be easily damaged.

    Care

    • Hand-wash with warm water and mild detergent.
    • Rinse and dry immediately.
    • Avoid using cleaners containing bleach and citrus extracts.
    • Maintain cutting edge by regularly using honing steel.
    • Sharpen as needed. With regular use and honing, knife should not need sharpening more than once or twice per year.
    • Sharpen knife at home using a whetstone or knife sharpener specifically designed for scalloped blade, or have it sharpened by a professional.
    • Shun owners may return Shun knives to Shun facility for free sharpening. Visit Shun website for warranty service forms and additional information.
    • Store knife in safe place to protect edge and prevent injury.
