Why We Love It
- These large, ruby-red Carabinero prawns are packed with succulent, firmly textured meat – often compared to lobster – with a fresh, briny flavor. They're caught in the deep waters off the coast of Huelva, in southwestern Spain, and typically prepared with just a bit of salt and a few minutes on the grill to bring out their natural richness. The prawns are also wonderful seared, poached or steamed, then served with nori butter for an even creamier experience on the palate. Much of the crustacean's flavor is in its head, which is considered a delicacy, so be sure to enjoy every bite.
