    • Diablo: This soft, creamy Swiss cheese is handcrafted in the hilly, wild canton of St. Gallen from raw cow's milk. Aged for 5 months, the brine-washed cheese has a delicate texture and sweet flavor with notes of honey, pimento and apricot. (8 oz.)
    • Mahon: Known for its oil-rubbed orange rind and piquant, nutty flavor, this hard, cave-aged, cow's milk cheese is known as the "Spanish cheddar." (8 oz.)
    • Pecorino di Filiano: Hailing from the Basilicata region of southern Italy, this hard cheese is crafted from sheep's milk curds that are drained in baskets, woven into wheels and cave-aged for 8–10 months to produce a robust nutty-sweet flavor. (8 oz.)
    • Petit Pont-l'Évêque: Made from cow's milk, this rich French cheese has a white-orange rind that gives way to a soft center with full-bodied flavor. (7.76 oz.)
    • Petit Gres d'Alsace: Made in the vineyard region of Alsace, France, this soft, brie-like, cow's milk cheese is double-washed with brine. It's wrapped and cellared for 2 weeks, then washed with Champagne to enhance its intense flavor and fruity aroma. (8 oz.)
    • Robiola Cavina: A small dairy in the Lombardy province of Italy makes this cheese from a blend of cow's milk and goat's milk – a combination that results in a creamy texture and delicately tang. (8 oz.)
