Summary

Inspired by classic desserts, these coolly elegant treats re-create crème brûlée using premium ice cream. Made for us by an East Coast confectioner, the single-serving tortes start with a layer of delicate génoise sponge cake. Experts add rich crème anglaise ice cream prepared in-house using fresh cream, egg yolks and Madagascar Bourbon vanilla. Each treat is finished with a crust of caramelized sugar.

Ingredients

• Cake Base: Sugar, enriched wheat flour (niacin, iron, thiamine mononitrate, riboflavin, folic acid), modified food starch, canola oil, wheat starch, nonfat dry milk, leavening (sodium aluminum phosphate, acidic with aluminum sulfate, sodium bicarbonate), emulsifier (propylene glycol, mono and diester of fat, mono and diglycerides, lecithin), salt, wheat gluten, natural flavor, sodium stearoyl lactylate, cellulose gum.
• Ice Cream: Cream, milk, sugar, egg yolks, skim milk, natural vanilla.
• Sugar Topping: Sugar, brown sugar.
