Baked Alaska Mini Ice Cream Cakes, Set of 12

Summary

Inspired by classic desserts, these coolly elegant treats re-create Baked Alaska using premium ice cream. Made for us by an East Coast confectioner, the single-serving tortes start with a layer of delicate génoise sponge cake. Experts add rich strawberry ice cream prepared in-house using fresh cream, egg yolks, real fruit and Madagascar Bourbon vanilla. Each treat is finished with a swirl of toasted meringue.

Ingredients

• Cake Base: Sugar, enriched wheat flour (niacin, iron, thiamine mononitrate, riboflavin, folic acid), modified food starch, canola oil, wheat starch, nonfat dry milk, leavening (sodium aluminum phosphate, acidic with aluminum sulfate, sodium bicarbonate), emulsifier (propylene glycol, mono and diester of fat, mono and diglycerides, lecithin), salt, wheat gluten, natural flavor, sodium stearoyl lactylate, cellulose gum.
• Ice Cream: Cream, milk, sugar, strawberries, egg yolks, skim milk, natural vanilla.
• Meringue Topping: Dextrose, egg whites, modified food starch, gum arabic, calcium, lactate, sodium aluminum sulfate, tartaric acid, pure vanilla.
