Today, Seghesio's Journeyman Meat Co. celebrates the family heritage using classic Italian techniques and the abundance of the local area. The company's salumi and spreads are hand prepared using the finest, slow-aged heritage pork, traditional recipes and innovative seasonings. Great for everything from charcuterie platters, pizza and sandwiches to Roman-style pasta sauces, this collection includes five popular varieties.

    • Pancetta Rustica: The finest heritage pork belly is cured for a month, then aged for another month to create exceptional flavor and rich, creamy texture. (6–10 oz./170.1–283.5g)
    • Guanciale: Rich and silky, made with heritage pork jowls that are seasoned with Italian spices, then aged and cured for 2 months. (6–10 oz./170.1–283.5g)
    • Nduja di Sonoma Salame: This spicy spreadable variety is enhanced with Sonoma County Zinfandel and Calabrian peppers, plus locally grown cayenne, Aleppo and Piment d'Ville peppers. (4.5 oz./127.6g)
    • Chorizo Salame: Vibrant in color and heat, this dried Spanish-style variety gets its bold character from sweet smoked paprika and ground oregano as well as pimento, ancho and pequin chiles. (6 oz./170.1g)
    • Pepperoni Salame: Rich, hearty pork is seasoned with zesty spices, paprika, garlic and a hint of smoke. (6 oz./170.1g)
