Summary
FLAVOR PROFILE
- Tender yeast cake, golden raisins, glazed chestnuts
WHY WE LOVE IT
- In Italy, Christmas and New Year would be incomplete without a panettone on the table. Few can rival this version from the venerable Pasticceria Scarpato in Legnago, in the province of Verona, which is made from an exceptional recipe developed in 1888. Enriched with golden raisins and sweet glazed chestnut pieces, the bread is exceptionally light thanks to several risings. Serve it with coffee, tea or sweet dessert wine such as Vin Santo, or use it to make extra-decadent French toast or bread pudding.
