Preparation Instructions
Ingredients
- Popover mix (included)
- 6 eggs
- 2 cups (16 fl. oz./500l) whole milk
- 4 Tbs. (1/2 stick/60g) unsalted butter, melted
Directions
- Position rack in lower third of oven and preheat to 450°F (230°C).
- Place 6-well popover pan or 12-well nonstick muffin pan on rimmed baking sheet. Once oven is preheated, place baking sheet with pan in oven to preheat for 20 minutes.
- In blender, combine popover mix, eggs and milk. Blend on high speed until mixture is smooth, approx. 30 seconds. Scrape down sides of blender and add melted butter. Blend on high speed until combined, approx. 10 seconds. Set batter aside to rest for 15 minutes.
- Remove baking sheet with pan from oven. Stir batter. If using popover pan, spray each well with nonstick cooking spray and fill 1/2 full with batter. If using muffin pan, spray alternating wells with nonstick cooking spray and fill each 3/4 full with batter.
- Bake until popovers have puffed up dramatically and started to brown, approx. 18–20 minutes if using popover pan or approx. 15 minutes if using muffin pan.
- Reduce heat to 375°F (190°C) and bake until popovers are deeply browned and sound hollow when lightly tapped, approx. 10–12 minutes if using popover pan or approx. 8–10 minutes if using muffin pan.
- Remove pan from oven. Carefully remove popovers from pan and place on wire rack.
- Using paring knife, make small slit in side of each popover to release some of accumulated steam.
- Allow popovers to cool slightly.
- Using paper towel, wipe any excess oil from wells of pan and return to oven to preheat for 5 minutes.
- Repeat above steps for remaining batter.
- Serve warm.
