Use
- Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal and glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
Care
- Hand-wash.
- Maintain knife's cutting edge by honing and sharpening using a hand-held sharpener, an electric sharpener, a sharpening or honing steel, or a whetstone. Using the same brand sharpener as your knife collection ensures the material used is the correct hardness for the steel on your knives. Or have you knife sharpened by a professional.
- Recommended sharpening angle for standard blades is 14 ̊ per side, and for Asian-style blades (Santokus, Nakiris) is 10 ̊ per side.
- Store knife in safe place to protect edge and prevent injury.
