    Use & Care

    Use

    • Steel length should be at least as long as knife being honed.
    • Hone knife before each use to maintain sharpest edge.
    • Use with straight-edged knives only. Do not use with serrated or scalloped blades.
    • To properly hone most knives, hold at 20-degree angle and draw blade across steel.
    • To properly hone santokus, Miyabi and Kramer knives made by Zwilling, hone at angle between 9–12 degrees.
    • Never stroke same side of blade more than once in succession.

    Care

    • If metal filings accumulate on steel, remove them with damp cloth.
