Use & Care
Use
- Steel length should be at least as long as knife being honed.
- Hone knife before each use to maintain sharpest edge.
- Use with straight-edged knives only. Do not use with serrated or scalloped blades.
- To properly hone most knives, hold at 20-degree angle and draw blade across steel.
- To properly hone santokus, Miyabi and Kramer knives made by Zwilling, hone at angle between 9–12 degrees.
- Never stroke same side of blade more than once in succession.
Care
- If metal filings accumulate on steel, remove them with damp cloth.
