    Summary

The Wüsthof Performer collection combines centuries of culinary expertise with state-of-the-art manufacturing. The knives feature an ultra-durable Diamond-Like Carbon (DLC) coating that was originally created for space travel and motorsports. This gives each blade a nonstick, frictionless surface that effortlessly glides through hard and soft ingredients, and repels fats and acids to make cleanup a breeze. The all-black Hexagon Power Grip handle has a unique offset honeycomb structure for a nonslip grip that ensures safety and precision. The Rotoku knife is a Wüsthof innovation, pairing the curved edge essential for the rocking motion used by European chefs with the ultimate precision of an Asian-style chef’s knife for a multitude of uses. From fine slicing and speedy chopping to scooping and transferring ingredients, the Rotoku is elegantly and expertly functional.

    • Forged from single piece of high-carbon stainless steel.
    • Diamond-Like Carbon (DLC) coating increases surface hardness of steel to a remarkable Rockwell 104.
    • Innovative Rotoku shape merges European and Asian design to perform multiple functions: chopping, dicing, mincing, slicing, serving, transporting and more.
    • Heat-resistant blade is immune to adverse external effects.
    • Nonstick, frictionless surface of blade helps knife glide effortlessly through ingredients and makes cleanup easy.
    • Hollows along the blade’s edge allow small air pockets to form, minimizing sticking and maximizing efficiency.
    • Handle has offset honeycomb structure made of glass fiber-reinforced polyamide.

    Use & Care

    Use

    • Always use caution when handling sharp objects.
    • Avoid cutting on hard surfaces such as stone, metal and glass.
    • It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.

    Care

    • Hand-wash.
    • Maintain knife's cutting edge by honing and sharpening using a hand-held sharpener, an electric sharpener, a sharpening or honing steel, or a whetstone. Using the same brand sharpener as your knife collection ensures the material used is the correct hardness for the steel on your knives. Or have you knife sharpened by a professional.
    • Recommended sharpening angle for standard blades is 14 ̊ per side, and for Asian-style blades (Santokus, Nakiris) is 10 ̊ per side.
    • Store knife in safe place to protect edge and prevent injury.
